Preheat oven to 375°F (190° C). Line a 13 x 9-inch (33 x 23 cm) baking pan with foil or parchment paper leaving a 2-inch (5 cm) overhang; spray with cooking spray and set aside. Combine flour, baking soda, and salt in a medium bowl; set aside.

Beat margarine with sugars in a large bowl. Beat in eggs and vanilla until blended. Gradually add in the flour mixture; beat just until blended. Stir in cinnamon and ginger. Spread into the prepared baking pan. Combine chips, cranberries, and pistachios in a small bowl. Evenly sprinkle over the dough; press gently.

Bake for 20 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack for 10 minutes. Using the foil overhang, lift out of the pan and cool completely. Cut into 30 pieces.
