Step 1

Soak the beans in cold water for 12 hours*. Drain and rinse. Place half of the salt pork at the bottom of an enamelled cast iron casserole or a thick-bottomed pot. Cover with half of the beans, add the rest of the pork and then add the rest of the beans.

Step 2

Spread the brown sugar, maple syrup, and mustard on the beans and season. Place the onion in the center and cover with water to obtain 1 cm (½ inch) above the level of the beans. Cover and bake for 4 hours in an oven preheated to 150 °C (300 °F) or overnight, about 8 hours in an oven preheated to 120 °C (250 °F).

Step 3

Serve for breakfast, with toast or roast and eggs.

Notes

*Note: You can also cover the beans with cold water and bring to a boil. Simmer for 2 minutes then remove from heat, cover and let stand for 1 hour. Drain and rinse.
