Notes

Note on Mayonnaise: Use real mayonnaise, NOT salad dressing!
Quick Special Sauce Recipe: Combine 1/4 cup each of mayo, yellow mustard, maple syrup, and ketchup with zest and juice of one small orange and lime, 1/4 cup pickled jalapeño, and a splash of sherry vinegar.
Chef Marcus Meachum's Patty Blend & Garnish: For a richer patty, combine 2 pounds (900g) ground boneless chuck, 1 pound (450g) ground sirloin, 1/2 pound (225g) ground bacon, 1 teaspoon each of onion powder, garlic powder, dried thyme, 2 tablespoons dried shiitake powder, and 1/4 cup Worcestershire sauce. Divide into thin patties. Cook over medium-high heat in a cast-iron skillet or griddle top. Layer two patties with a slice of American cheese between them. Top with shaved onion and butter pickles. Serve on potato rolls.
