Fruit Pudding

Fruit Pudding

Recipe Book: Family Cookbook

A comforting dessert, easy to prepare, which showcases Quebec's small fruits. We used a mix of blueberries, haskaps, and saskatoon berries, but you can go with a single fruit or any other combination of your choice. With vanilla and a touch of lemon zest, you can't go wrong!

Preparation

1

Preheat the oven to 350°F.

2

In a baking dish, mix the fruits, sugar, juice, and lemon zest. Set aside.

3

In a large bowl, mix the flour, baking powder, salt, and sugar.

4

Add the butter to the dry ingredients. Break down the butter cubes with a pastry cutter or with two knives, until the pieces are the size of a small pea.

5

Pour the milk and egg into a small bowl.

6

Split the vanilla bean lengthwise and remove the small grains with a knife. Add the grains to the bowl of milk and stir.

7

Make a well in the center of the flour mixture and add the egg/milk mixture. Gently incorporate until all the dry ingredients are well moistened.

8

Pour the dough over the small fruits.

9

Bake in the oven for between 40 and 45 minutes.
