    Preparation

    1

    Step 1

Combine all sauce ingredients except corn starch in a saucepan. Heat on low/medium, stirring frequently. Add corn starch to thicken to the consistency of ketchup. Cool and refrigerate.

    2

    Step 2

Combine all meat ingredients in a mixer with a dough hook. Mix on speed 4-5 for 5 minutes until well combined and mashed.

    3

    Step 3

Pack the meat into a tight log shape, wrap tightly in tin foil, and refrigerate for at least 1 hour.

    4

    Step 4

Preheat grill or oven to 350F.

    5

    Step 5

If using a rotisserie, pierce the meat log with the spit. If using an oven, pierce with two long skewers to hang above a catch tray.

    6

    Step 6

Cook for about 1 hour or until the internal temperature reaches 160F. If using an oven, remove foil after 1 hour and cook for an additional 30 minutes to brown.

    7

    Step 7

Steam pitas over boiling water for 20 seconds per side.

    8

    Step 8

Slice the cooked meat as thinly as possible, then fry in a pan over medium-high heat until crisp.

    9

    Step 9

Assemble the Donair by layering meat, tomatoes, onions, lettuce, and cheese on a pita, then top with a liberal amount of sweet sauce and wrap in foil.

    Notes

The meat can be sliced using a deli slicer for best results.
The sauce can be stored in the fridge for several days.
Pitas are steamed to prevent tearing during assembly.
