Preparation

1

Step 1

Steam the crab legs for 7-8 minutes and let them cool.

2

Step 2

Remove all the crab meat from the shells and set it aside.

3

Step 3

Put half of the shells into a large pot with 4 quarts of water over high heat.

4

Step 4

Add onion, 1 stalk of chopped celery, and garlic, then bring the mixture to a boil.

5

Step 5

Continue to boil for 1 hour, stirring occasionally, then strain the stock.

6

Step 6

Measure 3 quarts of the stock into a large saucepan or cooking pot.

7

Step 7

Add potatoes, bring the mixture to a boil, then add ½ of the crab and the remaining ingredients to the pot and bring it back to a boil.

8

Step 8

Reduce heat and simmer for 4 hours, uncovered, until it reduces by about half and starts to thicken.

9

Step 9

Add the remaining crab and simmer for another hour until the soup is very thick.

Notes

I didn’t have enough time to allow for the full simmer, so I added a tablespoon or so of flour to thicken it up and hopefully make it stretch a little further.
It provided about 8 servings. But everyone wanted seconds, so next time I will double the portions.
I hope the Soup Nazi doesn't hunt me down for deviating from the original recipe.
