In a large saucepan, heat the oil over medium heat. Cook the onion, garlic, pepper, celery and carrot for 5 minutes, until softened.

Add the turkey and cook for 5 to 6 minutes, breaking it up with a wooden spoon, until no longer pink.

Add the chili powder, cumin and oregano. Cook for 1 minute, stirring.

Add the tomatoes, tomato paste, beans and broth. Bring to a boil, then simmer uncovered over low heat for 25 minutes, stirring now and then, until thickened. Season with salt and pepper.

Serve topped with cilantro.

Notes

Freezes up to 3 months in single portions. For a gluten-free version, use a gluten-free broth. A spoonful of 0% Greek yogurt adds about 20 kcal.
